The Production of Our Oil in Tropea

In the heart of the Tropea countryside lies our Cascina Salaco, a small farm that dances in harmony with nature. Here, among rolling hills and majestic trees, an age-old ritual takes place: the manual harvesting of olives .

This tradition has now been handed down for three generations, and we proudly want to carry on this activity that we are passionate about.

The branches, as they do every year, bend under the weight of ripe olives, ready to create each year’s best oil. Like every year at harvest time, (i.e., from October onward) at the first glow of dawn, we wake up and the fields in front of the farmstead await us with still dew on the leaves. Hands,  run through the lower branches parading ripe olives and reach for the higher branches of the olive trees with berries collected from the field. Firm strokes that cause these small fruits to settle into the nets we placed at the base of each tree. Dew caresses the leaves, while the wind makes us relive the ancient stories our grandparents used to tell us among the ancient olive trees. 

In the golden morning light, we fill the boxes with our harvest by sliding it out of the nets in which the olives had lain, then moving them to the old motor cultivator box. Every two boxes we fill our pickup and head to the oil mill where the next ritual begins.
